Whole-Wheat & Oatmeal Wonder Waffle
Here’s what you’ll need:
½ cup whole-wheat flour
¼ cup old-fashioned rolled oats
1 tsp. baking powder
2 Tbsp. brown sugar
Dash of cinnamon (or two or three)
1 egg white (this can be omitted if you do not have any eggs on hand or if you are vegan)
½ cup cold water (I have also used light vanilla soy milk which is lovely in this recipe also, but to save on calories I often use water).
1 Tbsp. olive oil
A splash of vanilla extract (it sometimes comes out fast, don’t worry, more only adds to the greatness)
Waffle iron
- Plug in your waffle iron. Now, not all waffle irons are created equal—some have different settings while others have no settings at all. If you have a setting on yours, I suggest you use the same setting that you have always used when making waffles. My setting options are not cut and dry but are instead represented by a line that starts thin and becomes thicker to represent low to high heat. I have mine set between low and medium.
- In a medium sized bowl, mix together all of the dry ingredients. Next, add in the egg white, water, olive oil, and vanilla extract. Mix together until well combined. (Be creative! You can also mix-in blueberries, raspberries, or chocolate chips for a real treat).
- Making sure your waffle iron is heated up completely, spray with non-stick cooking spray, and pour the entire mixture into the center of the waffle iron. Follow the normal steps of your particular waffle iron (flip over, watch for green light to go out, flip back over to remove, that sort of process). You should have a beautifully golden waffle. (If ever your waffle should not be fully cooked on an edge just place it in the microwave and cook for 20 seconds).
